Hello friends!
I've moved my blog over to my new main site: Plethora, Etc. is my new place for all things travel, baking, and beyond.
It was getting to be a bit much maintaining separate blogs, and plus I wanted a more professional look that does justice to all the gorgeous pictures that we take on our trips. Added bonus: the new design is much easier to navigate by country, like if you want to see all of the Ireland or Iceland posts at once.
I'm still in the process of transferring over the Sixteen Days in Ireland archives, but I hope to see you over there, where I'll continue writing about our various journeys and more! And, of course, please drop me a line and let me know what you think of the new look.

We interrupt our regularly scheduled programming...
...to talk about Iceland.
I know, you're probably here looking for stories about another country that starts with the letter "I" and ends with "-land", but, alas, we just got back from Iceland and I've been working frenziedly on a trip report before work eats me alive.
So! I should probably change the title of the blog away from being just about Ireland, but I'm out of clever blog names for now. Suggestions are welcomed, preferably from those more creative than I.
In the meantime, I hope you (what readers I do have. You're out there, right? It's okay if you're shy.) enjoy these posts. I should have them coming out over the next few weeks.
Ireland posts will begin again after Iceland is out of my system. (Pssh. Like that'll ever happen. Really, I don't know why we're still talking. You should just go to Iceland right now. Definitely.)

Busy, busy
Working frenziedly on getting more pictures edited and more writing done before work picks up again. By the way, happy New Year everyone! Lots of goodness going on this year - here are a few of the things I'm excited about:
- My sister-in-law got engaged and is getting married this summer. Woohoo!
- Jason and I (and two of our friends) are going to Iceland at the end of February. The travel bug bites again! (Clearly our goal is to hit up all the places starting with "I". I just hope I won't have to start a separate blog entitled, "Five Days in Iceland", because I can hardly keep up with all the photos and blogging from Ireland.)
Seriously, though - if you're looking for a travel deal, Iceland is where it's at right now. - Yoga. Because there's never a bad time for it and never not a reason to be excited about it. ;) (Or maybe I just needed a third item for this list. The world may never know.)
Anyway, happy 2013 - let's make it great!

Happy Thanksgiving!
Happy Thanksgiving to my readers from the US!
I know, I know, it's not quite Thanksgiving day yet. But I want to let everyone know that no, I'm not dead, and yes, I'm overdue for a blog update. :)
Work was crazy busy the last couple weeks as we went through a big organizational transition. Now that that's over with, I plan to pick up with more picture posts, another "Intermezzo", and more writing on our trip after the holiday. Stay tuned! And, as always, feel free to leave questions in the comments. I'd love to answer them.
In the meantime, if you're looking for a few tasty recipes for the holiday, here are some of my favorites:
- Prosciutto-wrapped asparagus
- Perfect brined turkey
- No-knead dinner rolls - I brush these with a mixture of honey and butter as soon as they come out of the oven
- Cranberry orange sauce
- Horseradish mashed potatoes
- Marbled pumpkin cheesecake

Quick update: Posting schedule
For those of you who might be checking in daily (mostly family members, I think) - don't worry, updates haven't stopped!
I fell farther behind on writing than I meant to, so we're now actually back in the States as I document our adventures. Day 7 parts 2 and 3 are in the works, and there will also be a guest post (can you guess by whom?) about driving in Ireland coming up shortly.
Now that we're back home and back to work, updates may be slightly less frequent. However, I'm committed to covering all sixteen days, as well as editing and posting the high quality DSLR images when they become available, talking a little more about our itinerary and where we stayed, and probably a few more surprises here and there.
